Scrumptious Sunday

Dawn started a new Sunday Blog called Scrumption Sunday. Since it's about food, you know I'm in. We had meatloaf sandwhiches today, since I made meatloaf for dinner last nite - and I tried a new recipe my friend Dierdre gave me. It's really simple, and it is Scrumptious!

2-lbs of ground turkey (or ground beef is you prefer)
2 cups of shredded zucchini (I throw mine in the food processor)
1 package Lipton (or similar generic brand) onion soup mix.

  1. Preheat oven t0 350 degrees.
  2. Mix it all together, then spread it out on a wax paper (or foil) lined baking sheet.
  3. Spread 1-1/2 cups shredded cheese - cheddar, pepperjack, American, italian blend - any kind you like best.
  4. Roll up.
  5. Seal ends tightly.
  6. Place in loaf pan, seam side down.
  7. Cook 1 hour uncovered.
  8. Let Stand 5 minutes, drain excess fat/juices then place on serving dish.
  9. Have at it!

I'm going to try this. It would be one way to get my family to eat squash without them knowing it! LOL

It's very good - and you don't taste the zucchini! We all like the stuff, but, it never hurts to get some extra veggies!
