Today I'll tell ya'll about a homemade rice pilaf we had yesterday. My friend gave this recipe to me a few years ago, and we've been obsessed ever since. Unfortunately, it's one of those, "little of this - little of that" recipes, as far as actual ingredient amounts, but I'll try:

Homemade Rice Pilaf
Olive Oil
1 cup of dry spaghetti (any type - thin, extra thin, vermicelli, angel hair, etc.) broken into little pieces about 1" to 2" long.
6 cups of either Chicken or Beef broth (I use low-sodium, fat free but you can use what you like)
1-1/2 cup of uncooked white rice (or brown if you prefer)
salt. pepper,
garlic (powder or minced) OPTIONAL

Saute the spaghetti pieces & the garlic if you're using it, in olive oil until the pasta is evenly browned. Stir constantly as they brown very quickly.
Add the broth, and bring to a boil then add the rice.
Add salt & pepper to taste then bring to a boil.
Cover, turn to very low, and let it finish cooking.
As soon as the liquid is absorbed, it's done!
MAKES A WHOLE LOT, so hope you're hungry! (I often freeze 1/2 immediately)

Try looking for Fideo next time rather than sphaghetti. It would be in the Ethnic/Mexican aisle.
